Starting with my own curry paste made from lots of fresh herbs, spices and aromatics, and simmered with coconut milk + a little peanut butter for a rich, fragrant curry.
Cooked with sliced peppers, prawns + lime juice, and served with a generous portion of greens with a little desiccated coconut, to give them a lovely nutty, toasted flavour.
This meal is suitable for freezing.
