My take on one of my favourite rice dishes - the biriyani.
I've tried to pack in as much fragrant flavours and textures into this dish, with crunchy flaked almonds, juicy raisins, delicate saffron + 'just a little bit crispy' onions!
Rather than going overly heavy on rice, this recipe is balanced well with cauliflower and tender, juicy chicken pieces.
Finished with chilli, coriander + lemon and now with a delicious raita pot to finish.
