Delicious and nutritious, my take on a 'Buddha Bowl' - a very healthy bowl full of colours, flavours + goodness!
With wholegrain rice, kale, carrot, red cabbage, lemon red onions, roasted squash and a tahini sauce - this one would make the perfect lunch or dinner!
Top with either grilled chicken or pan seared tofu, and finished with toasted mixed seeds and a squeeze of lime.
