My deliciously light Jerk Chicken bowl is full of flavour - now with a little dipping pot of lime coconut sauce.
The chicken thigh are marinaded in my own blend of Jerk spices then pan seared and baked to finish - keeping them juicy and tender!
Served on a bed of coconut rice with lots of sauteed cabbage greens, fresh coriander, chilli, sweetcorn, kidney beans and lime.
Medium heat, and a little sweet.
Suitable for freezing.
